3 Tomato Recipes to Try Before Summer Ends

The best, juiciest tomatoes are available from the third week of July to the last week of October! There are plenty of ways to showcase the sweet acidity of ripe tomatoes, whether you throw them on the grill or toss them in a salad. Take advantage of tomatoes from now until the fall season, and discover three recipes to try!

Caprese Salad 

Caprese salad is a classic, simple Italian dish. It only requires a handful of ingredients, but you’re free to add more or less or make this salad your own! Start with two to three ripe tomatoes and slice them to your liking. Next, slice one round ball of mozzarella to match the number of tomato slices. Arrange them in an alternating pattern on a plate, drizzle with balsamic vinegar and oil, and sprinkle the entire dish with salt and pepper. Lastly, incorporate a few leaves of basil, and enjoy!

Tomato Sandwich

Tomato sandwiches are a summer staple, but there are plenty of ways to take this dish up a notch. Start with two to three ripe tomatoes and cut them into slices. Lay the slices out on a dish and sprinkle with salt and pepper. Toast two slices of bread and cover each slice with a generous spread of mayonnaise. Lastly, fill the sandwich with toppings of your choosing such as onions, basil, and spinach! 

Stuffed Tomatoes 

Stuffed tomatoes look as good as they taste! Start with six medium, ripe tomatoes and cut a thin slice off of the top of each. Scoop out the pulp of the tomato and set aside. In a bowl, combine one cup croutons, two tablespoons parmesan cheese, two tablespoons cheddar cheese, four tablespoons melted butter, ½ teaspoon salt, ¼ teaspoon pepper, and the tomato pulp. Place the hollow tomatoes in a baking dish and fish each one with the mixture. Cover the tomatoes with aluminum foil and bake at 350 degrees for 30 minutes. Bon appétit!
