The fall season is an excellent opportunity to make delicious, seasonal dishes! Soups are a staple of fall cuisine, especially throughout the regions of Italy. Discover four of our favorite Italian soup recipes, and visit Basta Pasta to try one of our signature soups!

Pasta e Fagioli

If you’re craving a dish that’s both hearty and healthy, you’ll love Pasta a Fagioli! This soup involves a medley of vegetables, noodles, meat, and cheese. Gather onions, carrots, celery and more to provide a flavorful foundation for the recipe. Choose traditional noodles like Ditalini, orecchiette, or orzo. Add sausage, chicken, or shrimp, or opt for a vegetarian version of the dish! Garnish your bowl of Pasta e Fagioli with a generous portion of parmesan cheese, a squeeze of lemon, and fresh herbs.

Chicken Tortellini Soup

The best part about chicken tortellini soup is that it can be easily made in a slow cooker! Assemble the following ingredients: one pound of boneless chicken breast, two carrots, two celery stalks, two sprigs of thyme, six cups of chicken broth, one teaspoon of Italian seasoning, 18 ounces of cheese tortellini, and salt and pepper to taste. Place all of the ingredients into the slow cooker, set the cooker to low for six hours, and enjoy!

Minestrone

Minestrone soup is a necessity in your Italian cookbook. Traditionally, minestrones soup was considered a humble dish as it involved leftover ingredients from previous meals. Today, minestrone is more widely dispersed and enjoyed throughout Italy than pasta! Common minestrone ingredients include beans, onions, celery, carrots, stock, and tomatoes, but the dish welcomes creativity and new flavors!

Creamy Italian Sausage and Broccoli Soup

If you enjoy cream-based soups, try a bowl of creamy Italian sausage and broccoli soup! This recipe combines a delicious blend of Italian sausage, creamy broth, and perfectly-cooked broccoli. Create a vegetarian version by omitting the sausage and adding spinach or garbanzo beans!
