Toast to National Pumpkin Day with Basta Pasta

The temperature is dropping, Halloween decorations are appearing, and the fall season is officially upon us! We’re approaching the end of October, which means now is an excellent time to start preparing your favorite pumpkin recipes! Pumpkin Tiramisu 

Tiramisu is a popular Italian dessert for every season! Not only is it creamy and sweet, but it’s also caffeinated! To create the pumpkin version of this timeless dessert, you’ll need the following: one cup of heavy whipping cream, one cup of mascarpone cheese, ⅓ cup of sugar, one teaspoon of vanilla extract, one tablespoon amaretto liquor, two cups of espresso, one pack of ladyfingers, and canned pure pumpkin! Prepare the tiramisu as you normally would, but mix a can of pure pumpkin into the classic mascarpone base! The pumpkin flavor compliments the dessert perfectly without drowning out any of its best flavors. 

Pumpkin Pasta

For this pumpkin pasta with sausage, you’ll need the following: one package of rigatoni, one pound of Italian sausage, two tablespoons of olive oil, four minced garlic cloves, one shallot, fresh spinach, one can of pumpkin puree, and salt and pepper to taste. After you brown the sausage, add olive oil to the pan and saute the shallot, garlic, and spinach. While the pasta cooks, add the pumpkin puree and sausage to the olive oil mixture and. Sprinkle with salt and pepper and serve over the hot rigatoni! 

Pumpkin Pie Sangria 

Sangria originally hails from Spain, but the Italians have their own twist on the beverage! This sangria is a refreshing treat after a long week. To create your own you’ll need the following: one bottle of Prosecco, ½ cup Libby’s pumpkin pie mix, 24 ounces of Goya mango juice, ½ cup of maple syrup, one teaspoon pumpkin pie spice, one apple sliced, and one large sliced orange. Add all of the ingredients into a large pitcher, allow it to sit for three to four hours, and enjoy! To make a delicious non-alcoholic version, replace the Prosecco with sparkling cider!
