Basil

Basil is a staple of Italian cooking, though it actually made its way to Italy from India through the spice trade. Basil pairs very well with tomatoes, which is why it is a must for almost all red sauces. It also pairs well with garlic, lemon, and many kinds of cheese. Basil brings a freshness to any dish, and it also has antibacterial properties.

Oregano

Oregano is actually not as commonly used in Italy as Basil or Parsley are, though it is very common in cooking in the United States. In Italy, you will find more oregano in southern Italian and Sicilian dishes. Oregano is very flavorful especially in a dried form and it contains many minerals.

Parsley

Flat leaf parsley is found in almost all sauces, soups, seafood and vegetable sauces, and pasta dishes. Parsley is full of vitamins and complements spicy dishes beautifully. It also is a breath freshener, which is why it is often used in conjunction with garlic.

Sage

Sage is both an anti-inflammatory and a digestion aid. The word “sage” even comes from the Latin root “health”. Because if these health benefits, sage is used heavily in Italian cuisine. It also tastes great, complementing heavy pasta dishes like gnocchi or risotto and meats.

Bay Leaves

Bay leaves come from the laurel tree and they add a spicy kick of flavor to any dish. Bay leaves are often used to flavor meat dishes because they offer a stronger flavor than other herbs. Bay leaves also have vitamins like A and C.

Rosemary

Rosemary offers a peppery, woody flavor. It is a hardy herb that grows well in many areas of Italy and beyond. Rosemary is also a symbol of friendship and thought to chase away bad dreams. Rosemary is often used in roasted dishes from vegetables to meats.
