May is National Salad Month! Why not liven up your meals by trying out a new salad? From the beautiful valleys of Tuscany to the Mediterranean Sea, these Italian salad recipes will be sure to liven up your next springtime dinner party. 

Garlic Caesar Salad

Liven up your classic Caesar in a couple easy ways to keep things tasty and new. The important thing here is the dressing: combine ¼ cup mayonnaise, 3 tablespoons of grated pecorino cheese, 1 anchovy fillet, 2 tablespoons of water, 1 teaspoon of red wine vinegar, 1 smashed clove of garlic, and a dash of Worcestershire sauce and of Tabasco. Add pepper to taste and dress uncut romaine hearts. Top with shaved parmesan cheese and anchovy fillets.

Chopped Italian Salad

This recipe takes a modern twist on a classic staple of the everyday dinner table. Assembling this dish cannot get any easier. Cut a head or two of romaine lettuce into squares and mix with your favorite antipasto ingredients. We chose to make this dish with sliced pepperoni, drained and sliced pimientos, some red onion, and chopped artichoke hearts. These ingredients are so delectable on their own and they heighten each other’s flavors when mixed together. This salad is great with a very simple dressing: 3 tablespoons of white vinegar, ¼ cup of olive oil, ½ cup of parmesan, and salt and pepper to taste

Anchovy and Roasted Pepper Salad

Why not mix things up with a warm salad with your next dinner? Warm salads are unexpected and will liven up your next dinner party. Roast a couple of red peppers over a flame until charred, then discard the skin, stems, and seeds. Cut the roasted peppers into strips. Combine with anchovies, olives, capers, and garlic for a delicious side dish. When you are ready to serve, dress the salad with red wine vinegar and olive oil, and top with fresh goat cheese for a tart surprise.
